Ingredients
½ cup frozen fruit (blueberries, raspberries or mangoes, or whatever it is that you like!)
2 tablespoons coconut syrup
1 teaspoon lemon zest
½ cup desiccated coconut for rolling
2 scoops of collagen powder
½ cup raw cashews soaked in water for about 4-5 hours
1 cup desiccated coconut
What to do next
- Drain the cashews in a blender and combine all the ingredients.
- Blend until well-combined.
- Make small bite size balls from the mixture and throw in the extra coconut.
- Refrigerate.
- Keep in the fridge for up to 2 weeks, or you can freeze and keep it for later.
