Chickpea Salad

This Chickpea Salad is a protein-rich and fiber-packed snack that’s also light and refreshing.


  • 1 can of chickpeas, drained and rinsed
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • Red onion, finely chopped
  • 2 tablespoons olive oil
  • Lemon juice (from 1 lemon)
  • Salt and pepper to taste


  1. In a bowl, combine chickpeas, cucumber, red bell pepper, and red onion.
  2. Drizzle with olive oil and lemon juice.
  3. Season with salt and pepper.
  4. Toss well to combine.
